This cheese is mild but flavorful, and I enjoy it cold or in grilled cheese. It's really superb.

The Farmer’s Brick Cheese arrived in an insulated box and was in perfect shape. The taste of the cheese was great and it reminded me of cheese presented in Maryland when I was a young man there. The Maryland cheese was created in Lancaster, Pennsylvania by Amish. This cheese, by SIMPLY CHEESE, appeared to be made by Amish artists and has the same taste, the same quality and appeal as the Lancaster cheese. I salute makers. I will order in the future as needed!
This is so tasty and creamy! Great to eat alone, on crackers, or as a toasted cheese sandwich. Just the best ever!
I ordered this without great expectations. I was wrong. In fact, it may be the jewel in Simply Cheese's crown. As a table cheese at room temperature, it is smooth, buttery and creamy, with a flavor something like Monterrey Jack, but with a far cleaner finish. Toasted, it makes a lovely puffy pile that is not stringy as a mozzerella would be. It is delicate and very seductive. It works perfectly grated into pasta dishes. It will more than substitute for those plastic-wrapped slices for school lunches, and is not so strongly flavored that half the sandwich will come home. (We ate "Government Cheddar" in my day and were glad to have it.) This is worlds away -- an honest, delicious cheese that will make you think a bit about the nature of farmers.
