    NOTE: Since they are not aged, fresh cheese curds have a refrigerator shelf life of about 14 days. However, you can freeze cheese curds for up to 4 months.

    Living in Texas, I have ordered from Simply Cheese for years to get my cheese curd fix. I had previously tried other companies but Simply Cheese surpassed all of them with the flavor and quality of their cheese curd. Their website is simple to use and their customer service is amazing. Recently I was visiting family in Ohio and got the opportunity to visit their brick and mortar store. What a great experience! We got to watch them preparing cheese through a large window and got to try many of their cheeses. (Who knew farmers cheese is so delicious?). We had called ahead and they had 25 pounds of still warm, squeaky cheese curd waiting for us. We ate WAY too much on the way back “home.” Oh how I have missed fresh squeaky cheese. Thank you to all of the ladies who were so nice and helpful both on the phone and in the store. I will definitely be ordering more when the weather cools in Texas this winter!

    This is fresh, tasty, and low-carb. If you want a real treat and aren't counting carbs, dice some potatoes up and pan fry them, preferably in bacon grease or lard. When they are nicely browned, add some cheese curd and cover with brown gravy. This gives you the French-Canadian national dish called "Poutine." It's a solid and and filling dish. The correct Quebecois gravy is a medium brown and seasoned with allspice, although I think there must be hundreds of variations of it. The cheese is the most important ingredient. Many places try to substitute grated cheese for fresh curd, but it simply isn't the same.
