Here in New England, brick cheese is virtually unknown. That is a shame. Fresh brick like this is absolutely wonderful sliced over a piece of crusty bread and grilled with a slice of ripe tomato or a few sun dried tomatoes. The flavor is buttery and more flavorful than many common melting cheeses. Brick melts well and is not excessively greasy. Aged brick takes a little more courage, as it is a smelly cheese, but makes a fantastic flatbread melted over sourdough. (This is not aged brick.) A lovely cheese at a very reasonable price. I will order again.
When we moved from PA to Phoenix AZ, we got tons of odd looks when we asked for Brick cheese at the deli counters. It's not everywhere you have to be, so when I found this site to order it, it was like a second Christmas. We always loved and enjoyed the flavor of this cheese, and when the package was received and we tasted the fresh buttery cheese, it was like being back in PA where Brick cheese was plentiful.
